Recipe in English:Ingredients:Prepare Green marinade:-Hara dhania (Coriander) 3/4 Cup-Hari mirch (Green chilies) 10-15-Podina (Mint leaves) ½ Cup-Yogurt (Dahi) 1/3 Cup-Tetra pack cream 3 tbs-Adrak lehsan paste (Ginger garlic paste) 1 tbs-Kali mirch powder (Black pepper powder) 1 tsp-Garam masala powder (Whole spice powder) ½ tsp-Namak (Salt) 1 & ½ tspSpatchcock Chicken:-Whole chicken with skin 2 kg-Butter 1 tbs-Oil 1 tbs-Coal (Koyla) for smoke Caramelize onion:-Makhan (Butter) 1 tbs-Oil 1 tsp-Pyaz (Onion) rings 2 -Namak (Salt) 1-2 pinch-Brown sugar 1 tbsButter Rice:-Pani (Water) 2 tbs-Zafran (Saffron) powder or strands ½ tsp (optional)-Makhan (Butter) 1/3 Cup or as required-Pani (Water) ½ Cup-Chawal (Rice) 1 & ½ Cups (boiled with 1 tsp salt)Directions:Prepare Green marinade:-In blender,add coriander,green chilies,mint leaves and blend well.-In bowl,add yogurt,tetra pack cream,ginger garlic paste,black pepper powder,whole spice powder,salt, greens and mix well.Spatchcock Chicken:-Wash and pat dry whole chicken.Cut tips of the wings.-Upside down chicken and pat dry again.-Cut whole chicken with kitchen scissor,cut the back bone of the chicken and break breast bone with knife & flatten it.-Transfer chicken in a dish,add green marinade and spread evenly,marinate for 4 hours.-Heat griddle,add butter,oil and marinated chicken,place aluminum foil and put a heavy pan on chicken and cook on low flame for 20 minutes.-Remove weight,apply marinade and turn the chicken,again apply marinade.-Turn the chicken and cook for another 20 minutes or until chicken is done (total cooking time: approx.45-50 minutes).-Give a coal smoke for 1-2 minutes.For Caramelize onion:-In frying pan,add butter,oil,onion rings and mix.-Add salt,brown sugar and cook on low flame until onions are translucent brown and keep stirring in between.For Butter Rice:-Dissolve saffron powder or strands in water and mix well and soak for 10 minutes.-In pot,add butter,water and let it melt,add boiled rice and mix gently-Add saffron on top of the rice,cover and put it on low flame for 5-8 minutes.Note:-You can bake in pre-heated oven at 180 C for 1 hour and 15 minutes.-Grill or steam cook at low flame until done.Recipe in Urdu:Ajza:Prepare Green marinade:-Hara dhania (Coriander) 3/4 Cup-Hari mirch (Green chilies) 10-15-Podina (Mint leaves) ½ Cup-Yogurt (Dahi) 1/3 Cup-Tetra pack cream 3 tbs-Adrak lehsan paste (Ginger garlic paste) 1 tbs-Kali mirch powder (Black pepper powder) 1 tsp-Garam masala powder (Whole spice powder) ½ tsp-Namak (Salt) 1 & ½ tspSpatchcock chicken:-Whole chicken with skin 2 kg-Butter 1 tbs-Oil 1 tbs-Coal (Koyla) for smoke Caramelize onion:-Makhan (Butter) 1 tbs-Oil 1 tsp-Pyaz (Onion) rings 2 -Namak (Salt) 1-2 pinch-Brown sugar 1 tbsButter Rice:-Pani (Water) 2 tbs-Zafran (Saffron) powder or strands ½ tsp (optional)-Makhan (Butter) 1/3 Cup or as required-Pani (Water) ½ Cup-Chawal (Rice) 1 & ½ Cups (boiled with 1 tsp salt)Directions:Prepare Green marinade:-Blender mein hara dhania,hari mirch aur podina dal ker ache tarhan blend ker lein.-Bowl mein dahi,tetra pack cream,adrak lehsan paste,kali mirch powder,garam masala powder,namak aur greens dal ker ache tarhan mix ker lein.Spatchcock Chicken:-Chicken ko dho ker pat dry ker lein.Wings ka tips ko cut ker lein.-Chicken ko palat dein aur dubara pat dry karein.-Kitchen scissor ki madad sa whole chicken ko cut ker lein,back bone ko cut ker lein aur breast bone ko knife ki madad sa break karein & flat ker lein.-Chicken ko dish mein transfer ker lein,green mariande dal ker ache tarhan pheela lein aur 4 hours kliya marinate ker lein.-Tawa garam karein,makhan,oil aur marinated chicken dal dein,upper sa aluminum foil aur heavy pan ko chicken ka upper rakh dein,20 minutes kliya halki ancch per paka lein.-Weight hata lein,marination laga ker chicken ko palat dein,phir dubara marination laga lein.-Chicken ko turn ker lein aur mazeed 20 minute ya chicken gul janay tak paka lein (total cooking time: approx.45-50 minutes).-1-2 minutes kliya koyla ka dhuwa dein.For Caramelize onion:-Frying pan mein makhan,oil aur onion rings dal ker mix ker lein.-Namak,brown sugar dal dein aur halki ancch per pyaz ko translucent brown hunay tak paka lein aur chamcha chalatay rahein.For Butter Rice:-Zafran powder or strands ko pani mein dissolve karein aur 10 minutes kliya soak ker lein.-Pot mein makhan aur pani dal ker melt ker lein,boiled chawal dal ker gently mix ker lein.-Chawal ka upper zafran dal dein,dhak ker 5-8 minutes kliya halki ancch per rakh dein.Note:-Pre-heated oven mein 180 c per 1 hour aur 15 minutes kliya bake bhi ker saktya han.-Grill or halki darmiyani ancch per steam cook bhi ker saktay han.
