Fish BiryaniRecipe in English:Ingredients:For Spices powder:-Kali mirch sabut (Black pepper corns) ½ tsp-Laung (Cloves) 4-5 -Hari elaichi (Green cardamom) 3-Badiyan ka phool (Star anise) 1-Saunf (Fennel seeds) 1 tsp-Dhaniya (Coriander seeds) 1 tsp-Zeera (Cumin seeds) 1 tsp-Dar chini (Cinnamon stick) 1For marinating Fish:-Machli (Fish) King fish/Surmai ½ kg-Namak (Salt) 1-2 pinch-Dahi (Yogurt) ½ cup-Lal mirch powder (Red chili powder) ½ tbs or to taste-Lemmo ka rus (Lemon juice) 1-2 tbs-Adrak lehsan paste (Ginger garlic paste) 1 tbs-Haldee powder (Turmeric powder) ¼ tsp-Namak (Salt) ½ tbs or to taste-Ground spices-Machli (fish) king fish/surmai ½ kgFor Rice:-Paani (Water) 1 liter-Tez pat (Bay leaves) 2-Badi elaichi (Black cardamom) 2-Badiyan ka phool (Star anise)-Namak (Salt) ½ tbs or to taste-Zeera (Cumin seeds) ½ tsp-Dar chini (Cinnamon stick) 1-Chawal (Rice) soaked 2 cupsFor Layering:-Ghee ½ cup-Marinated fish-Boiled rice -Pyaz (Onion) fried ¼ cup-Hara dhaniya (Green coriander) 2 tbs-Podina (Mint) 2 tbs-Hari mirch (Green chili) 2-3-Doodh (Milk) ½ cup -Jaiful & javatri powder (nutmeg & mace powder) ½ tsp-Garam masala powder (Whole spice powder) ½ tsp-Zarda ka rang (Food color) ¼ tspDirection:-In frying pan,add black pepper corns,cloves,green cardamom,star anise,fennel seeds,coriander seeds,cumin seeds and cinnamon stick,roast until light brown and grind to make a coarse spices powder.-Take fish and apply salt evenly. Leave it for 10-15 minutes and wash properly.-In bowl,add yogurt,red chili powder,lemon juice,ginger garlic paste,turmeric powder and ground spices, mix well.-Now add fish, give it a good mix and marinate for 1-2 hours.-In water, add bay leaves,green cardamom,star anise,salt,cumin seeds and cinnamon stick, bring it to boil.-Add rice and cook until ¾ th done,strain and set aside.-In pot,heat ghee,add marinated fish and cook on a low flame for 6-8 minutes.-When fish is done,add boiled rice,fried onion,green coriander,mint and green chili.-In milk,add nutmeg & mace powder,whole spice powder and food color,mix well.-Now add milk mixture,cover and steam cook for 15-20 minutes.-Fish biryani is ready.Recipe in Urdu:Ajza:For Spices powder:-Kali mirch sabut (Black pepper corns) ½ tsp-Laung (Cloves) 4-5 -Hari elaichi (Green cardamom) 3-Badiyan ka phool (Star anise) 1-Saunf (Fennel seeds) 1 tsp-Dhaniya (Coriander seeds) 1 tsp-Zeera (Cumin seeds) 1 tsp-Dar chini (Cinnamon stick) 1For marinating Fish:-Machli (Fish) King fish/Surmai ½ kg-Namak (Salt) 1-2 pinch-Dahi (Yogurt) ½ cup-Lal mirch powder (Red chili powder) ½ tbs or to taste-Lemmo ka rus (Lemon juice) 1-2 tbs-Adrak lehsan paste (Ginger garlic paste) 1 tbs-Haldee powder (Turmeric powder) ¼ tsp-Namak (Salt) ½ tbs or to taste-Ground spices-Machli (fish) king fish/surmai ½ kgFor Rice:-Paani (Water) 1 liter-Tez pat (Bay leaves) 2-Badi elaichi (Black cardamom) 2-Badiyan ka phool (Star anise)-Namak (Salt) ½ tbs or to taste-Zeera (Cumin seeds) ½ tsp-Dar chini (Cinnamon stick) 1-Chawal (Rice) soaked 2 cupsFor Layering:-Ghee ½ cup-Marinated fish-Boiled rice -Pyaz (Onion) fried ¼ cup-Hara dhaniya (Green coriander) 2 tbs-Podina (Mint) 2 tbs-Hari mirch (Green chili) 2-3-Doodh (Milk) ½ cup -Jaiful & javatri powder (nutmeg & mace powder) ½ tsp-Garam masala powder (Whole spice powder) ½ tsp-Zarda ka rang (Food color) ¼ tspDirection:-Frying pan mein sabut kali mirch,laung,hari elaichi,badiyan ka phool,saunf,dhaniya,zeera aur dar chini dal ker light brown hunay tak roast ker lein,grind ker k powder bana lein.-Machli per namak chirak ker 10-15 minute kliya rakh dein aur ache tarhan pani sa dho lein.-Bowl mein dahi,lal mirch powder,leemo ka rus,adrak lehsan paste,haldee powder aur grinded spices dal ker mix ker lein.-Ab is mein machli shamil ker k ache tarhan mix karein aur 1-2 hours kliya marinate ker lein.-Pani mein tez pat,hari elaichi,badiyan ka phool,namak,zeera aur dar chini dal ker ubal lein.-Chawal shamil ker k ¾ th pak janay tak paka lein,strain ker k side per rakh dein.-Pot mein ghee garam ker k marinated fish shamil karein aur halki ancch per 6-8 minute kliya paka lein.-Jab machi pak jaye tou boiled rice,fried pyaz,hara dhaniya,podina aur hari mich dal dein.-Doodh mein jaiful & javatri powder,garam masala powder aur zarda ka rang dal ker mix ker lein.-Ab doodh ka mixture dal ker,dhak ker 15-20 minute kliya steam cook ker lein.-Fish biryani tayyar hai.
